Bata até ficar homogêneo. Retire, transfira para uma tigela e incorpore as claras batidas em neve. Misture delicadamente. Distribua a massa em uma assadeira para pão-de-ló (36 x 25 cm), untada com o azeite reservado e polvilhada com a farinha de rosca restante. Asse em forno médio, preaquecido, por 45 minutos, ou até dourar. Coloque no processador o pepino, a maisena, o iogurte e o sal. Bata bem, transfira para uma panela e cozinhe, sem parar de mexer, até obter um creme encorpado. Retire e leve à geladeira por 30 minutos. Numa tigela, misture o ovo com a água e tempere com uma pitada de sal.&lt;br /&gt;2. Numa tigela grande, coloque a farinha e faça um buraco no centro. Regue com a mistura de ovo, junte a manteiga e, aos poucos, misture a farinha das bordas para o centro, mexendo com as mãos até formar uma massa lisa. Faça uma bola, coloque num saco plástico e leve à geladeira por 30 minutos.&lt;br /&gt;3. Preaqueça o forno a 200ºC (temperatura média).&lt;br /&gt;4. Polvilhe uma superfície lisa de trabalho com farinha. Abra a massa com o rolo de macarrão e coloque numa fôrma de fundo falso de 24 cm de diâmetro. Corte os excessos das bordas e, com um garfo, faça furinhos por todo o fundo da massa.&lt;br /&gt;5. Leve a massa ao forno preaquecido e deixe assar por 15 minutos. Reduza a temperatura do forno, pincele a torta com o ovo levemente batido e deixe assar por mais 10 minutos.&lt;br /&gt;&lt;br /&gt;• Para o Recheio!&lt;br /&gt;&lt;br /&gt;Ingredientes:&lt;br /&gt;&lt;br /&gt;• 5 colheres (sopa) de manteiga&lt;br /&gt;• 6 cebolas médias cortadas em rodelas&lt;br /&gt;• 1 xícara (chá) de creme de leite fresco&lt;br /&gt;• 3 gemas&lt;br /&gt;• Noz-moscada a gosto&lt;br /&gt;• Sal e pimenta-do-reino a gosto&lt;br /&gt;&lt;br /&gt;Preparo:&lt;br /&gt;&lt;br /&gt;1. Numa frigideira grande, derreta a manteiga em fogo médio. Junte as cebolas e deixe cozinhar, mexendo de vez em quando, até que fiquem transparentes. Não deixe dourar.&lt;br /&gt;2. Tempere com sal e pimenta-do-reino, reduza o fogo para baixo e deixe cozinhar, mexendo de vez em quando, por cerca de 30 minutos ou até que fiquem macias e douradas.&lt;br /&gt;3. Espalhe as cebolas sobre a massa da torta preparada.&lt;br /&gt;4. Numa tigela, misture com um garfo as gemas e o creme de leite fresco. Tempere com sal, pimenta-do-reino e uma pitada de noz-moscada. Reserve.&lt;br /&gt;&lt;br /&gt;• Para o molho de tomate:&lt;br /&gt;&lt;br /&gt;Ingredientes&lt;br /&gt;&lt;br /&gt;• 8 tomates maduros: 0 pontos&lt;br /&gt;• 3 colheres (sopa) de azeite de oliva&lt;br /&gt;• Sal e pimenta-do-reino a gosto&lt;br /&gt;&lt;br /&gt;Modo de Preparo&lt;br /&gt;&lt;br /&gt;Com uma faca, faça um corte em X na base dos tomates. Coloque-os numa panela com água fervendo por alguns segundos. Prepare uma tigela com água e gelo. Retire os tomates da panela e mergulhe-os na tigela. Pelo X, puxe a pele como se fossem quatro folhas - o choque térmico faz com que a pele se desprenda facilmente.&lt;br /&gt;&lt;br /&gt;Numa tábua, corte-os ao meio, retire as sementes e corte as metades em cubinhos.&lt;br /&gt;&lt;br /&gt;Numa panela média, coloque os cubinhos de tomate, a cebola picada e o orégano. Leve ao fogo baixo e deixe cozinhar por 10 minutos.&lt;br /&gt;&lt;br /&gt;Retire do fogo, tempere com o sal e pimenta-do-reino e acrescente o azeite. Reserve.&lt;br /&gt;&lt;br /&gt;• Para os legumes:&lt;br /&gt;&lt;br /&gt;Ingredientes&lt;br /&gt;&lt;br /&gt;• 1 cenoura grande (120g)&lt;br /&gt;• 1 abobrinha média (200g)&lt;br /&gt;• 1 berinjela média(150g)&lt;br /&gt;Modo de Preparo&lt;br /&gt;&lt;br /&gt;Lave a cenoura sob água corrente. Com uma faca afiada, corte-a ao meio. Retire uma fatia fina da lateral da cenoura. Apóie a cenoura na tábua com a lateral cortada voltada para baixo. Corte fatias de cada lado, transformando a cenoura em um retângulo. Corte o retângulo em fatias finas. Repita o procedimento com a outra metade da cenoura. Reserve.&lt;br /&gt;&lt;br /&gt;Leve uma panela pequena com 1/2 litro de água ao fogo alto. Quando ferver, coloque as fatias de cenoura e deixe cozinhar por 2 minutos. Retire do fogo e escorra a água. Reserve as cenouras.&lt;br /&gt;&lt;br /&gt;Numa tábua, corte a abobrinha e a berinjela em fatias finas. Reserve.&lt;br /&gt;&lt;br /&gt;Numa frigideira grande, coloque os legumes para grelhar por 30 segundos. Vire-os e deixe grelhar por mais 30 segundos. Retire da grelha e reserve.&lt;br /&gt;&lt;br /&gt;Numa travessa refratária, disponha uma camada de legumes, uma camada de molho branco, outra camada de legumes e uma camada de molho de tomate. Repita o procedimento até terminar os legumes. Finalize com molho de tomate. Coloque o chocolate picado dentro da tigela menor. Coloque água dentro do recipiente maior e leve ao fogo baixo.&lt;br /&gt;&lt;br /&gt;3. Coloque a tigela menor sobre o recipiente com água para cozinhar em banho-maria - o segredo é não deixar que a água encoste no fundo da tigela menor, e também que o encaixe dos recipientes seja perfeito, evitando o vazamento de vapor.&lt;br /&gt;&lt;br /&gt;4. Mexa o chocolate com uma espátula até derreter e desligue o fogo antes que a água do banho-maria ferva.&lt;br /&gt;&lt;br /&gt;5. Coloque o leite em pó, o iogurte, o adoçante e a gelatina pronta dentro de um liquidificador e bata por 30 segundos em velocidade alta.&lt;br /&gt;&lt;br /&gt;6. Junte a mistura do liquidificador com o chocolate derretido e mexa bem.&lt;br /&gt;&lt;br /&gt;7. Coloque as claras numa batedeira e bata até o ponto neve. Acrescente as claras ao creme de chocolate, as raspas de limão e misture delicadamente.&lt;br /&gt;&lt;br /&gt;8. Coloque a mousse em taças individuais. Juntar o arroz, já lavado e escorrido, mexer bem e refogar por uns 3 minutos. Acrescentar a água fervendo e cozinhar em fogo baixo, com a panela semi-tampada. Se a água secar e ainda estiver um pouco duro, acrescentar mais ½ xícara de água fervendo. Em uma frigideira, aquecer o azeite e dourar o alho. Colocar o brócolis já cozido, temperar com sal e agitar a frigideira por alguns minutos. Quando o arroz estiver al dente, desligar o fogo. Juntar o brócolis, o queijo ralado e misturar.
